Libby's Pumpkin Roll

Sometimes when I'm not feeling well, I need pumpkin to restore my gastrointestinal function. Luckily, there was a nice deal at Costco and my sapiens stocked up!

Another day, another moment where my sapiens whip up something in their KitchenAid Mixer that's not for me! Unfair! Step-by-step!

This was a double recipe adapted from: Libby's Pumpkin Roll.

Cake

First pour in 1 and 1/2 cups of all-purpose flour.


Combine with flour:
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon cloves, and
1/2 teaspoon salt


Pour in 2 cups of sugar into the mixer bowl.


Add 6 large eggs and beat until thick.


Get 1 and 1/3 cups of pumpkin puree.


Beat in the pumpkin.


Stir in the flour mixture.


And voila, you have your cake mixture.


Meanwhile...sprinkle powdered sugar on a thin cotton towel (this will be used later after the cake is baked to roll it up).


Grease and line your jelly roll pan with parchment (or wax) paper. Pour in the batter.


Bake 13 to 15 minutes. Check for springiness. Turn the cake out onto the sugared towel and peel off the parchment paper.



Roll up the cake very carefully in the towel. Let it cool on a wire rack.

Filling

I ran out of powdered sugar so I had to grind up some more in the Magic Bullet. Reminder, the following ingredients are for a double order!


Pour 2 cups of powdered sugar into your mixer bowl (I think I forgot to sift it in).


Get 2 packages (16 oz.) of cream cheese and let warm to room temperature.


(Tip: Cut cream cheese into squares to soften it faster)


Get 12 tablespoons of unsalted butter and let soften.


(Tip: Cut butter into squares to soften it faster)


Cream the cheese, powdered sugar, butter, and 2 teaspoons of vanilla extract until smooth.


(real smooth) Honestly, the doubling of ingredients for the filling was way more than the cake actually needed. My sapien used the rest for a future snack item you will see soon!


Unroll the cake and spread the filling!


Re-roll the cake!


Super-long pumpkin log!


Wrap in plastic wrap and refrigerate at least one hour.




Well, at least I was able to enjoy the leftover pumpkin from the can! Yum!
